The registered trademark "TRAPPIST" certifies that this ale was brewed within
the walls of an existing trappist monastery under the control of the trappist
community. A major part of the sales revenue is used by the monks to support
charitable works. The exceptional yeast isolated by Father Theodore, combined
with the purity of the highly protectected water of the abbey's wells, gives Chimay
its unique richness. Since 1862, Chimay's secondary fermented ales have
neither been pasteurised nor filtered and only natural ingredients are used. To
fully appreciate the pleasant sharpness and the light hint of bitterness of the
Chimay Premiere, serve slightly chilled, in a wide-mouthed glass.

Appearance
Ice-tea like in color, cloudy and unfiltered. Carbonation whirs around the glass
along with sediment. Head is off white in color, airy and foamy, with good initial
height but dissipates quickly without much lacing on the glass.
Initial bold head
collapses under its own weight. A tea-like unfiltered appearance not dissimilar to
a homebrew. Interestingly, the acidity prevents the brew from lacing the glass.

Aroma
Citrus scents, pear, grape, and lime, along with malt and light alcohol tones. Not
unpleasant but overall lighter than expected.
Signature malt with some sour
apple tones over a palate of warmth. Nutty, earthy, rich, and yeasty with a salt bite.

Palate
Very smooth, I would NOT say weak, but smooth. The pear, green grape, and
lightly sweet malt flavors present right away.
A charmingly soft mellowness but
also carbonation and a touch of acidity. Flavors of grape, malt, dry hop, and a bit
of salt.

Finish
A sharp carbonation kick and then a return of the tea-like character. The citrus
flavors in the finish take on a tangy essence and there is a significant salt
component.
Mild and salty with a full mouthfeel. Textures ebb and dissipate with
an unusual irregularity. A little sweet pokes through in a pleasant manner.

Synopsis
An enjoyable corked bottle with a champagne-like "pop". Has the requisite ale
citrus but the zesty carbonation and salt components predominate the flavor. The
essence is alot like iced-tea except with a warming quality at the end.
Not overly
strong, yet distinct and definitive of an old history of Belgian ales. Presents as a
refined version of a homebrew.
