Belgian Ale List
The registered trademark "TRAPPIST" certifies that this ale was brewed within
the walls of an existing trappist monastery under the control of the trappist
community. A major part of the sales revenue is used by the monks to support
charitable works. The exceptional yeast isolated by Father Theodore, combined
with the purity of the highly protectected water of the abbey's wells, gives Chimay
its unique richness. Since 1862, Chimay's secondary fermented ales have
neither been pasteurised nor filtered and only natural ingredients are used. To
fully appreciate the strong character of the Chimay Grande Reserve (see vintage
on cork), serve slightly chilled, in a wide-mouthed glass.

Appearance
An attractive dark brown tea-like color, with vivid hues of orange and red when
held to a light. Head is light tan in color, medium height, very airy and foamy, and
vanishes quickly with almost no lacing on the glass. Large bubbles dominate a
short lasting head that can be described as fiery while it lasts. Unfiltered with
sediment the color is a warm brown. I am looking for more character and I
imagine that will come in the other rating categories.
Aroma
Nice strength, pleasant alcohol tones swirl around a large basket of fruit...pears,
orange, lime, cantaloupe, and a very faint banana over a back drop of sweet malt.
A moderate alcohol bang. A pronounced zest to compliment a backbone of malt
and bread yeast. A roasty feel on top of a fruity grape and pear.
Palate
Very smooth and easy drinking, more of an iced-tea mouthfeel instead of a
significant creaminess but full flavored and complex. Flavors include pear,
orange, lime, and banana citrus, a lightly sweet malt, and hint of salt. True to the
aroma with additions of a bit of chocolate and oak. The nose of the brew is its
salty zip and convergence of flavors mentioned. A minor spiciness excites the
taste buds.
Finish
All of the citrus flavors already mentioned carry through and a carbonation zest
kicks in but it is not overbearing. More salt and spice enters the mix but
compliments rather than taking over. A nice overall ale essence. The Grande
Reserve packs more punch than the Chimay Premiere. All flavors are longer
lasting and reflect the ales intent. Smooth yet with a discernible zip to the tongue.
Synopsis
Very nice, I prefer this over the maroon labeled Chimay Premiere and over the
white labeled Chimay. Complex with ale citrus, zest, salt, spice, and sweet malt.
Flavors compliment rather than cancelling each other out. A solid Belgian ale
and worth checking out. Good flavors and easy drinking for the style but oddly my
favorite Belgian ales are brewed in the U.S.A.
