CHEESY BREW SOUP
2 Tbs. Butter
1 Cup Red Bell Pepper
½ Cup Chopped Yellow Onion
½ Cup Chopped Celery
1 Tbs. Minced Garlic
½ Cup White Flour
2 Cups Chicken Broth
12 oz. Dark Lager
1 Cup Milk
1 Tbs. Paprika
¼ tsp. Red Pepper
¼ tsp. Dry Mustard
1 Tbs. Worcestershire
2 Cups Sharp Cheddar Cheese
In a Dutch Oven melt the butter and add Bell Pepper, Onion, Celery, and Garlic. Cook till soft. Add
Flour and keep moving for about 2 minutes. Pour in beer, broth and milk and whisk till smooth.
Bring to a boil over medium heat. Reduce heat to a simmer and let thicken for 10 minutes.
Incorporate dry spice and Worcestershire. Lastly add cheese while whisking to provide smooth
texture. Serve immediately!
